You’ll Need

(serves 2)

*     1 butternut squash

*     50g Puy lentils

*     1 onions , peeled, halved and thinly sliced

*     1 garlic cloves peeled and finely chopped

*     1 tsp cumin seeds

*     1 tsp ground cumin

*     1 tsp ground cinnamon

*     1½ tsp sweet paprika

*      A pinch cayenne pepper

*     100g feta cheese , crumbled

*     20g pine nuts

*     1 tbsp chopped mint

*     1 tbsp chopped flat-leaf parsley

*     1/2 lemon , juiced

*     Seeds from ½ pomegranate (Couldn’t get my hands on a pomegranate but it was still delicious)

* Can be served with tahini yoghurt. More
